Potato Puree Patties Revised: 03/03/2012
Ideal Protein Potato Puree Mix
1 teaspoon Dried Chives
1 teaspoon Butter Flavor (found this in the extract/spice aisle, it is a liquid)
1 teaspoon Land O Lakes Sour Cream & Onion Seasoning
1 ½ tablespoon finely chopped green onion
3 tablespoons egg whites
2 tablespoons water
½ teaspoon salt
Put all the dry ingredients into a bowl. Add all the liquid ingredients and whisk together. Heat 2 teaspoons oil in a pan over medium heat. Add the potato mixture in 4 mounds, spreading them as thin as possible. Cook a couple of minutes and then flip over and cook until done. Turn down the heat if they start to get too dark.
03/03/2012 Note: This was my first try at these so I am sure I will be tweaking them a bit. They tasted very good but a little salty to me so I may drop the salt to ¼ teaspoon. I also found they were thicker than I thought they would be so I will be adding more water to them to see if I can get them to crisp up a bit. But I DID enjoy them along with a nice tossed salad with the remainder of my vegetables.
