IP Leek Soup Mix
2 egg whites (I use 6 tablespoons of “All Whites” made by Crystal Farms)
2 ounces water
pinch of sea salt
pinch of baking powder
Italian Herb Seasoning (use as much or as little as you wish or use other seasonings you enjoy)
Preheat the waffle iron.
Place all the ingredients but the Leek Soup Mix into a bowl and whisk to mix. Add the Leek Soup Mix and whisk it until all the dry ingredients are mixed in.
Spray the waffle iron with Olive Oil Spray or Butter Spray. Pour about 1/4 cup of batter onto each side of the waffle iron. Close lid. Cook for about 3-5 minutes.
The flavor turned out really well. But I tried to use these as holders for my lunchtime salad & vegetables and everything kept falling out. I think they will be good for when I get to Phase 2 and can have meat for lunch, then I can use them as a bread for my meat and have a sandwich.
