I have found the soups to be hard to eat sometimes because of their taste and their texture. So to improve on those two things I have consistently added a few things to all the soups I eat. I generally add the following items:
3/4 cup chopped zucchini
1/4 cup Anaheim Pepper (or any hot pepper)
1/2 teaspoon Mrs Dash Seasoning (sometimes Garlic & Herb and sometimes Onion & Herb)
2 ounces extra water
I saute the zucchini & peppers in a pan sprayed with butter spray until almost done. I then place these into a food processor (I have a mini-chopper that works really well) and process until a fine mince. I then mix the soup according to the directions on the package, add the Mrs. Dash Seasoning & warm it up (DO NOT BOIL!). I add the extra water & then pour the vegetable mixture into the soup & stir until mixed well. Remove from heat & eat.
For the IP Mushroom Soup Mix I will sometimes add 1/2 cup of sautéed mushrooms after I have mixed in the other vegetables.
For the Broccoli & Cheese Soup Mix I will sometimes add cooked and mashed cauliflower along with some Anaheim Peppers.
02/27/2012 ~ There is another Mrs Dash Seasoning Mix which is Lemon Pepper that I have found really brightens up the soups. I have been using that a lot lately. And when I made the mushroom soup with the Morel Mushrooms, I used the strained mushroom soaking liquid in place of some of the water…yum!
